Chocolate Orange French Madeleines 

Definitely one of the most well loved snacks for my family-- both the boys and my hubby.  So well loved, I had to make them over and over again!  





Ingredients
100g unsalted butter ( plus extra for greasing)
2 large eggs
100g caster sugar
100g Blue Jacket Unbleached All Purpose Flour( plus extra for dusting)
2 tsp orange juice
2 large oranges, zested
3/4 tsp baking powder
1/8 tsp salt
150 g orange flavoured ( bittersweet) chocolate

Instructions
  1. Melt the butter, either in the microwave or a small saucepan, and then set aside to cool slightly.
  2. Whisk flour, baking powder and salt together in a separate bowl.
  3. Place the eggs and sugar into a large bowl and whisk together on high until foamy. Fold in flour mixture , orange juice, orange zest, and melted butter to the egg mixture until fully incorporated.
  4. Place the Madeleine mixture in the fridge to chill for 30 minutes.
  5. Preheat oven to 200C or 390F ( 180C fan)
  6. Brush Madeline tray with melted butter and dust it with a thin layer of flour to prevent Madeleines from sticking too much. Shake off excess flour.
  7. After 30 minutes, remove batter from fridge and spoon into the Madeleine tray. Fill each shell almost to the top. Bake for 9 to 11 minutes, until slightly golden, springy to touch, and a skewer or toothpick inserted in the middle comes out clean.
  8. Almost immediately, loosen the Madeleines from the tray using a fork, then gently place it on a wire rack to finish cooling.
  9. Once Madeleines are cool, it is time to dip them into orange chocolate. Break the childcare into small pieces and place in a microwave in a microwaveable-safe bowl. Heat in 20 second intervals, stirring between each time, until chocolate is completely melted. Dip the cooked Madeleines into the chocolate at and angle. Shake off excess chocolate and place it on a lined baking sheet. Place the baking sheet in the freezer to chill until completely set.
