Basque Burnt Cheesecake
This is by far the most popular Cheesecake that is trending now, that everyone loves to bake. However, This recipe is slightly different from the others available in the online, as it uses a double boiler method. It provides a smooth finish for the Cheesecake, as the finished batter is sieved through a sieve to prevent any lumps from forming during the mixing process.
Makes a 5 inch Cheesecake
Ingredients
315g Cream Cheese
80g Sugar
15g Honey
2 pcs Egg Yok
1/2 pcs Whole Egg
10g Blue Jacket Cake and Pastry Flour
135g Whipping Cream
1. Preheat oven to 250 degrees C for Electric Oven, 240 degrees C fir Gas Oven,
2. Bring cream cheese and egg to room temperature.
3. Soften crea, cheese in a big bowl with a double boiler using the bain-marie method.
4. Once the cream cheese has softened into a cream texture, remove it from the double boiler.
5. In a separate bowl, mix the honey, egg yolk and whole egg. Make sure that the mixture is evenly incorporated.
6.Then add in sugar and mix well. Sift the cake flour.
7. Add the whipping cream into the mixture ad mix well. Bring it to a double boiler (70-80 degrees C) and heat it up to 35-40 degrees C skin temperature.
8.Remove from double boiler and mix together with the softened cream cheese.
9. Sieve the mixture to prevent any lumpy texture. Pour the mixture into the mould lined with baking paper. Bake in the oven at 250 degrees C (Electric Oven) or 240 degrees C (Gas Oven) for 15-20 minutes.
