Famous Amos Copycat Cookies 

This recipe was a recipe that was written by a Malaysian homebaker, which she claims is very close to the the Famous Amos Recipe.  The recipe went viral very quickly, and very soon, everyone seems to be baking them, and re-creating them.  This recipe is so easy to make, that my 12 year old son was able to help me make it!  You can either choose to mix the ingredients by hand, or effortlessly, with a simple hand-mixer.  The verdict from those who have tried my cookies?  A big thumbs up!  Really, very close to the real thing!  What's more, this recipe yields more than 140 bite-sized (same as Famous Amos size) cookies!   When you spoon the cookies out with two teaspoons, after mixing, don't worry too much about shaping it much, as it will look more natural after baking that way.  Hope you enjoy baking them and eating them as much as we do!







This recipe yields approximately 140 cookies or a few more (because the extras were eaten by my boys.)

Ingredients
250 grams of Salted Butter (softened)
1 1/4 cups of brown sugar
2 1/2 cups Blue Jacket All Purpose Flour
1/2 cup corn flour or corn starch
2 cups chocolate chips
1 tsp vanilla essence
1 tsp baking powder
1 tsp baking soda or sodium bicarbonate
6 tbsp vegetable oil
1 egg

Method
1. In a bowl, combine the softened butter, brown sugar, vanilla essence, egg, and oil and mix well.
2. In a separate bowl, whisk the flour, corn flour, baking powder, baking soda and chocolate chips.
3. Refrigerate the cookie dough for 30 minutes.
4. Meanwhile, preheat oven to 150 degrees Celsius.
5. Either grease the baking tray with some butter, or cooking spray, or line your tray with baking paper, or silicone baking sheet.
6. Using two teaspoons, spoon the cookies on to the tray, or you may choose to roll them into balls.
7. Place the baking tray on the middle rack of the oven.
7. Bake at 150 degrees Celsius for 20 minutes, until golden brown.
8. Cool the cookies on a cooling rack completely, before storing it away in an airtight container or air-tight Tupperware.
