Chawan-mushi


This is the all time favourite for children and adults alike. Silky smooth texture... who can resist?

You should be able to purchase the cute fish cake from the wet market or supermarket.  They come in a frozen pack.

Chawan-mushi

Ingredients:


1 instant chicken stock cube
4 Eggs
5 fancy fish cakes
10 gingko nuts
5 fresh shitake mushrooms
60g cooked chicken meat ( cut into cubes)
2 Chinese rice bowls of water


Method:
1. Beat eggs till smooth.  Dissolve chicken cube into 1 bowl of hot (not boiling) water.  Add to the eggs, stirring as you add.  Add another bowl of hot water to the mixture stirring, until combined.
2. Heat water in steamer until it boils.
3. Using a fine strainer, strain the eggs into steaming bowls.  Place the bowls into the steamer and steam over medium-low heat for 10 minutes.
4. Add fish cakes, gingko nuts, mushrooms and chicken.  
5. Continue to steam for 5 minutes then turn off the heat.
