Plum Apple Pie





Looks complicated, but doesn't it look healthy and yummy?  You can do it too... just read on the recipe and try it!


Ingredients and equipment:

Pampas short crust pastry (1 sheet)
Plums
Water (2 Cups)
Sugar (3-4 Tbsp)
Potato Starch (1 tsp)
Black eye Beans (1 chinese bowl)
Parchment paper
Pie dish

Method:

  1. Heat oven to 180 •C. Greased pie dish. Line with parchment paper. Roll pastry on lined pie dish. Poke holes on pastry with fork or roller. Put beans second layer of parchment paper on top of pastry. Spread beans on paper. Bake blind at 180 •C top and bottom heat. Bake for 20 minutes. Meantime, prepare apples and plums. 
  2. Using apple corer, remove core. Add water and sugar to taste and cook apple still caramelised at low heat in ceramic pot. 
  3. Remove excess water, keep aside. Once pastry is golden brown, spread apples on pie crust, cut and arrange plums to cover pie. Return to oven. Grill top heat for 3 minutes. 
  4. Remove from oven to cool. 
  5. Using remaining juices bring to boil, add 1 tsp potato starch ( with a little water) and add it to the boiling juices. Add a bit at a time, stirring constantly. When pie is completely cooled, you can either have the choice of sliding it off the parchment paper to a dish. Bring the thickened juices to a boil, and laden it evenly on the pie. Using a sharp chef's knife, you can cut the pie and serve with good coffee or tea.
